Noble Sugar Cookies (Jennifer Clark)

2 1/4 c flour

1/2 tsp baking soda

1/2 tsp cream of tartar

1/2 tsp slat

1 c margarine, quartered and softened

1/2 c sugar

1/2 c confectioner's sugar

1 large egg

1/2 tsp vanilla

*1/4 c sugar (for coating) optional


In a medium bowl, combine flour, baking soda, cream of tartar and salt; set aside. In a large bowl, beat margarine, sugar, and confectioner's sugar, until light and fluffy. Beat in egg and vanilla until well blended. Gradually add the dry ingredients, beating until well blended. Cover with plastic wrap and refrigerate until firm, several hours or overnight. Preheat oven to 375. Pinch off about 1 tbsp of dough and roll to form 1 inch balls. Roll dough in remaining sugar to coat thoroughly. Place on cookie sheet about 2 inches apart. Flatten with the bottom of a glass. Bake about 8 minutes. Cool on a rack.
