Granola

2 1/2 c uncooked oats
1/2 c firmly packed brown sugar
1/2 c sunflower seeds or chopped nuts (I like walnuts or pecans)
1/3 c. honey
1/4 c. melted butter
1/4 c. unprocessed bran or wheat germ
1 tsp. cinnamon
1 tsp. vanilla
1/2 c raisins, craisins, or other chopped dried fruit (optional)
3 tbps claxseed (optional)
Preheat the oven to 325. Mix dry ingredients in a large mixing bowl. Mix wet ingredients in another bowl. Mix wet and dry together. If you're using dried fruit, don't add it until AFTER you bake the granola. Pour the granola into a greased 9 x 13 baking pan. Bake for 20-25 minutes, stirring occasionally. Stir in dried fruit if using. Spread micture ontoan ungreased cookie sheet; cool. Break it apart with your hands. Store in an airtight container in a cool, dry place. It's good in a bowl with some milk, too!
