Grandma Kocherhans' Peanut Brittle (Lee Pratt)

3 c sugar

1 c light corn syrup

1/2 c water

3 c raw peanuts

3 tsp butter

tsp salt

2 tsp baking soda

Boil sugar, corn syrup, and water until it threads and spins. Add peanuts and cook to hard crack stage (300 degrees). Remove from heat and add salt and butter; stir, then add soda and stir again. It will bubble here and that is what makes it light. Spread thin on buttered cookie sheet. Allow to cool. Break into pieces and enjoy.
