Chicken Hominy Soup (Alicia Quirante)

3 chicken breast, cubed

1 onion

2 tsp garlic

1 tbsp chicken soup base

1 can of chicken broth

3 cans hominy

1 head lettuce

2-3 lemons

pepper (black, red or white-I like McCormick's hot shot)


Chop 1/2 of onion and soak in 1/2 c vinegar. Let it soak while soup is cooking.


Saute the rest of the onion and garlic in 1/2 c of chicken broth. When garlic and onion is golden brown, add the chicken, and a little more chicken broth. Saute the outside of the chicken. Add about 8-10 c of water, 2 tablespoons of chicken soup base, and hominy. Let everything simmer for a while, to let the chicken finish cooking. Add pepper(s). Shred lettuce and quarter lemons.

To serve, put a handful of lettuce in the bottom of bowl, put soup in, squeeze 1-2 lemons (as much as desired) in, top with a spoonful of soaked onions and enjoy!
