Chicken Adobo (Alicia Quirante)

In a large skillet, saute:
2 tbsp olive oil

6-8 cloves garlic

Add 4-6 frozen chicken breasts.


Add:

3-4 c water

1 c soy sauce

1 tbsp sugar

3/4-1 c white vinegar

1/2 c cooking wine

2 bay leaves

a touch of lemon juice

Simmer, covered, for a few hours until chicken is cooked and easy to shred. Serve over rice.
