Pansit (Alicia Quirante)

Cook 4-6 chicken breast, dice and set aside. If adding crab meat, shred or dice into bite size pieces and set aside. *Next make base. In a large skillet over medium high heat, saute:
2-4 tbsp olive oil

at least 6 cloves garlic

1-2 onion, chopped finely

2 stalks celery, chopped finely

1/4 c soy sauce

Cook until almost done, then add:
1/4 c soy sauce

1/8 tsp fish sauce

a touch of msg or accent

1/4-1/2 c lemon juice

4 c water

1/4 c cooking wine
Add chicken. *While cooking base, steam carrots and broccoli (about a cup,give or take) of each. Start soaking 1 package rice noodles in hot water. Turn down heat on base and add:
carrots

broccoli

1/4 c soy sauce
Mix well; add noodles and crab meat. Add the following to taste:
msg or accent

soy sauce

fish sauce (only a few drops)
