Pampered Chef'sTortilla Soup (Natalie Montague)

1/2 c onion, chopped

1 garlic clove, pressed

1/4 tsp ground cumin

1-14.5 oz can diced tomatoes, undrained

3 boneless, skinless chicken breast halves

1/4 tsp chili powder

2-14.5 oz cans chicken broth

1-4 oz can chopped green chili, undrained

cilantro

sour cream

shredded cheese

1. Cut chicken into 1/2 inch pieces. Heat oil in pan and add chicken, cook and stir 3 minutes. Add onion, garlic, chili powder, and cumin. Cook and stir 2 minutes. Stir in broth, tomatoes, and chilies. Bring to a boil, reduce heat and simmer 10 minutes.


2. Put in bowls and add cilantro, sour cream, and cheese.


Yields 4 servings.
