1 egg white
1 tbsp vanilla
1 lb pecan halves
1 c white sugar
3/4 tsp salt
1/2 tsp cinnamon
Preheat oven to 250 and grease one cookie sheet. Whip egg and vanilla until frothy. In a separate bowl, combine sugar, salt and cinnamon. Add pecans to egg and stir to coat evenly. Remove nuts and toss in sugar mixture until coated. Spread evenly on sheet and bake for 1 hour, stirring every 15 minutes.
