1 c warm water
2 tbsp yeast
1 1/2 tbsp sugar
Let yeast set for about 5 minutes, until you can't see the water on the side of bowl).
Add:
1 tsp salt
2 tbsp EVOO
*up to 2 c flour
(*start with less and add more if needed-if dough is too dry it is ruined)
Stir with a wooden spoon until mixed. Knead on floured counter into a ball (will be sticker than bread dough). Grease bowl with EVOO; rub extra oil on dough. Place dough into bowl and cover with a warm, wet dish towel. Let rise until at least doubled in size. Top with favorite red sauce, cheese and whatever topping desired. Bake at 375 for 10-15 minutes, until cheese is melted.
