Reese's Peanut butter Cup Cookie (Jennifer Clark)

Makes 8 dozen
1 c shortening

1 c peanut butter

1 c sugar

1 c brown sugar

1/2 tsp salt

2 eggs

1/2 tsp vanilla

2 c flour

1/2 tsp baking soda

2 pkg Reese's Peanut Butter cups (mini ones if you can find them)


Preheat oven to 375. Mix together all the ingredients. With mini size muffin pan, ungreased, fill each cup with 1/4-1/2" dough ball. Bake 8-10 minutes until lightly browned (not quite done). Open candy while cooking and press one candy into the center of each cookie immediately after baking. Wait 5 minutes for cookies to cool before removing fron pan or they will fall apart.
