1 lb or hamburger or 1 whole chicken
1 pkg enchilada mix
1-8 oz. can tomato sauce
2 cans (from tomato sauce) water
1-16 oz. sour cream
1 can cream chicken soup
3 to 4 c grated cheese
8 tortillas
green chilies (optional)
Brown hamburger or boil chicken and shred. Mix in enchilada mix, tomato sauce, and water. Let simmer until water is absorbed. In a bowl, mix sour cream, soup, and cheese. If using green chilies, add them now. Mix well. Spoon beef or chicken mixture into tortilla shells and roll up. Place in baking dish. Pour cheese mixture over the tops of the tortillas evenly. Bake at 350 covered for 45 minutes, uncovered for 15 more minutes.
