Cinnamon Muffins (Jennifer Clark)

1/3 c shortening

1/2 c sugar

1 egg

1 1/2 c flour

1 1/2 c baking powder

1 /2 tsp salt

1/4 tsp ground nutmeg

1/2 c milk


Topping:

1/2 c sugar

1 1/2 tsp cinnamon

3 tbsp butter,melted


In a bowl, cream together shortening and sugar. Add egg; beat well. Combine flour, baking powder, salt, and nutmeg; add to creamed mixture, alternation with milk. Mix well. Fill greased muffin cups, or lined muffin cups, half full. Bake at 350 for 15-20 minutes, or until a toothpick comes out clean. In a shallow bowl, combine sugar and cinnamon. dip muffin tops in butter, then in cinnamon/sugar mixture. Serve warm.
