Broccoli Rice Casserole (Jennifer Clark)

2 c rice, cooked

1 c broccoli, cooked

2 chicken breast, cooked and cubed

1 can cream of chicken soup

1 tbsp mayo

1/2 tsp salt

1/2 tsp pepper

1 c grated cheese


Pour in the chicken soup and add 1 can milk or water. Add the rice, broccoli, and chicken to the soup mixture. Stir until coated. Then add the mayo, salt, pepper, and the cheese and mix together with the chicken and soup mixture.


Put into a 9 x 13 pan. Top with extra cheese if desired. Bake at 350 for 30 minutes or until cheese bubbles.
