Pumpkin bars (Jennifer Clark)

4 eggs 1 2/3 c sugar

1 c vegetable oil

1-16 oz can pumpkin


Beat ingredients together in a large bowl until light and fluffy. In a seperate bowl combine:


2 c flour

2 tsp baking powder

2 tsp cinnamon

1 tsp salt

1 tsp baking soda


Add to the pumpkin mixture. Put in a 10 x 15 x 1 pan, ungreased for 20 minutes, check with a toothpick. Add 1 additional minute if needed. Do not overcook (overcooked if brown). Cool bars 1-1 1/2 hours. After cooled, frost with the following recipe:


Frosting

1-4 oz pkg cream cheese, softened

1/2 c butter or margarine, softened

1 tsp vanilla

3 c powdered sugar

(thin if necessary with 1 tbsp milk)
